100% Healthy Chocolate

     This recipe is simple, very very good for you and so delicious! It’s not too sweet, but very rich, so eat sparingly. The chocolate melts in your mouth like the inside of a truffle. This is a great way to get more healthy coconut oil in your diet. I cut down on the honey because I prefer dark chocolate, but use the fuller amount for a much sweeter version.

1 cup coconut oil

3 Tbsp – 1/2 cup honey
1/2 cup cocoa powder
1/2 cup nuts  (pecans, walnuts, almonds)

Combine first three ingredients in food processor until smooth. 
Add nuts and pulse just until they’re chopped and all ingredients are well combined.
Drop by spoonfuls onto waxed paper, parchment paper or aluminum foil.
Freeze for about 30 min.

Variations

Crunch Bar– Substitute rice crispies for the nuts to make a crunchy chocolate.
Reese’s Cup– Use 1/2 cup creamy or crunchy peanut butter and reduce coconut oil to 1/2 cup.
Ande’s Mint– Omit the nuts and add 1/2 tsp peppermint extract.
